CHOLESTEROL - FREE CHOCOLATE
CHIP COOKIES
 
2 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
3/4 c. brown sugar, packed
1/2 c. white sugar
1/2 c. margarine
3 lg. egg whites
2 tbsp. honey
2 tsp. pure vanilla extract
2 c. (12 oz.) semi-sweet chocolate chips

Preheat oven to 300°F. In medium bowl combine flour, baking soda and salt. Mix well with a wire whisk and set aside.

In large bowl blend sugars with an electric mixer. Add butter, and mix to form a grainy paste.

In small bowl, beat egg whites until fluffy. Add egg whites, honey and vanilla to sugar mixture, and beat until smooth. Scrape down sides of bowl.

Add the flour mixture and chocolate chips, and blend on low speed just until combined. Do not over mix.

Drop by rounded tablespoonsful onto ungreased cookie sheet 1 1/2 inches apart. Bake for 18-20 minutes until lightly browned. Immediately transfer cookies with a spatula to a cool, flat surface.

Yield: 3 1/2 dozen.
