CAULIFLOWER FRITTERS 
1 sm. head cauliflower
3 tbsp. all-purpose flour
1/2 tsp. salt
1/8 tsp. black pepper
2 tbsp. water
1 egg, lightly beaten
1 med. sized yellow onion, peeled & chopped

Separate cauliflower into small flowerets. Bring salted water to a boil in a 2 quart saucepan. Add cauliflower, bring to boil. Cover. Cook for 5 minutes. Drain in colander, coarsely chop cauliflower. Set aside.

While cauliflower is cooking. Mix flour, salt, pepper, water and egg in a bowl. Add onion and chopped cauliflower.

In 12 inch skillet heat oil over moderate heat until hot but not smoking. Drop the cauliflower mixture by tablespoons into hot oil. Saute 3 minutes on each side until brown. Drain on paper toweling. Keep warm in 250 degree oven until served.
