EGGPLANT PARMAGIANA 
Fresh eggplant
Slices of Mozzarella cheese
3 eggs, beaten
2-3 c. tomato sauce

Cut eggplant into 1/4 inch pieces. Salt on both sides. Let set for 1 hour. Wash slices. Place eggplant in 9x13 inch pan, then lay one piece of cheese over each piece.

Layer eggplant and cheese. Cover eggplant with beaten eggs. Cover the above with sauce. Bake at 350 degrees for 45 minutes.
