SQUASH PIE 
3 c. white summer squash
1 1/4 c. sugar
1 tsp. cinnamon
1 tsp. butter flavoring
4 tbsp. cornstarch
4 tbsp. water

Cut squash like you would apples into 9 or 10 inch uncooked pie shell. Mix sugar and cinnamon, pour over squash. Mix cornstarch and water and butter flavoring. Pour over squash and sugar. Cover with top pie crust. Bake at 400 degrees for 45 minutes. Take from oven and sprinkle with cinnamon and sugar. 6 to 8 servings.
