KAHLUA PIE 
18 Ritz crackers, rolled
1 c. walnuts, chopped
4 egg whites
1 c. sugar
1/2 tsp. baking powder
1 tsp. vanilla

FILLING:

1 c. heavy cream, whipping
2 tbsp. sugar
2 tbsp. Kahlua
1 tsp. vanilla
Sweetened chocolate, shaved

Crust: Thoroughly mix nuts and cracker crumbs. Beat egg whites until stiff, slowly add sugar, baking powder and vanilla. Fold into cracker-nut mixture. Spread evenly in 9 inch pie pan (greased). Bake at 325 degrees for 35-45 minutes. Cool.

Filling: Whip cream. Add sugar, Kahlua and vanilla. Filled cooled crust with this mixture. Garnish with shaved sweetened chocolate if desired.
