SCALLOPED OKRA & CORN 
3 c. sliced okra
1/2 sm. onion
1/2 green pepper
4 tbsp. shortening
2 tbsp. flour
1 c. milk
1 tsp. salt
1/8 tsp. pepper
1/4 lb. cheese, grated
2 c. corn
1 c. fine bread crumbs, buttered

Fry okra, onion and green pepper in 2 tablespoons shortening for 10 minutes, stirring often. Make a cream sauce of 2 tablespoons shortening, flour and milk; add salt, pepper and cheese. Stir until cheese is melted. Alternate layers of okra and corn in buttered baking dish. Pour sauce over top. Top with buttered crumbs. Bake at 350 degrees until brown and bubbly.
