SCALLOPED OKRA AND CORN
CASSEROLE
 
1 (15 1/2 oz.) can cut okra
4 tbsp. butter
1 (16 oz.) can corn
2 tbsp. flour
1 c. milk
1/2 lb. sharp cheese, sliced thin
2 tbsp. butter, melted
1 c. dry bread crumbs
Salt and pepper

Heat oven to 350 degrees. Butter baking dish. Drain water from okra and corn. Rinse okra in can once and drain again. Fry okra in 2 tbsp. butter for 10 minutes; stir well. Place okra and corn alternately on dish. Sprinkle with a little salt and pepper. Make the sauce using 2 tbsp. butter, melted. Add flour and blend to a paste. Slowly add milk and cook until thickened. Stir in cheese and cook over low heat until cheese is melted. Pour over okra and corn. Cover with crumbs that have been moistened with 1 tbsp. melted butter. Bake until heated thoroughly and crumbs are brown. Serves 4 to 6.
