BAKED BEANS, SOUTHERN STYLE
1 lb. dried marrow beans
6 c. water
2 garlic cloves, minced
1 onion, sliced
1 sm. dried hot red pepper
1 bay leaf
3/4 lb. salt pork, sliced
3 tbsp. molasses
1/4 c. catsup
1 tsp. dry mustard
1/2 tsp. ground ginger
1/2 tsp. salt
1 1/2 tsp. Worcestershire
1/4 c. firmly packed brown sugar

Cover beans with water. Bring to boil, and boil for 2 minutes. Cover and let stand for 1 hour. Add next 5 ingredients and cook until beans are tender. Drain, reserving liquid.

Put beans in shallow 2-quart baking dish, arranging pork slices on top. To 2 cups liquid (or water), add molasses and remaining ingredients, except sugar. Pour over beans; sprinkle with sugar. Bake, uncovered, in preheated hot 400 degree oven about 1 hour.
