BOSTON BAKED BEANS 
4 slices bacon
1 c. onion, chopped
1 clove garlic, minced or pressed
2 (15 oz.) cans pinto beans
1/2 c. water
1/4 c. ketchup
1/4 c. molasses
1 tbsp. dijon-style mustard
1/2 tsp. powdered ginger
1/2 tsp. salt
1/4 tsp. pepper

Slice bacon in 1/2" strips and saute with onion and garlic for 5 minutes, stirring occasionally. Drain beans. Combine beans, onion mixture and remaining ingredients in a 1-quart casserole. Bake, covered, at 350 degrees for 30 minutes. Serve beans with barbecued meat or chicken.

Makes 4 servings. For 8 servings, double ingredients. Bake in a 2-quart casserole.
