GOURMET CRAB DRESSING | |
1 stick butter 1 1/2 c. onion, chopped 1 bell pepper, chopped 2 stalks celery, chopped 1 (4 oz.) jar pimentos (optional) 2 cloves garlic, chopped 3 c. (or 1 lb.) crab meat 1 can shrimp 1 can Ro-Tel tomatoes 1 (10 oz.) can cream of mushroom soup 1/4 c. parsley, chopped 1/2 c. green onion, chopped 2 c. cooked rice Bread crumbs or cheese Melt butter and add onion, celery, bell pepper and garlic. Saute 3 minutes or until soft and clear. Add tomatoes and soup. Cook 5 minutes. Add crab meat and shrimp. Season to taste with salt and pepper and red pepper. Cook 5 minutes. Add green onions, parsley, pimentos and rice. Stir well. Pour into ungreased 9 x 13 inch casserole dish. Top with bread crumbs or cheese. Bake at 400 degrees 20 minutes or until heated thoroughly. |
