2 c. granulated sugar 1 c. buttermilk 2 tbsp. light corn syrup 2 tbsp. butter 1 tsp. baking soda 1 tsp. vanilla 1 c. coarsely broken pecans In heavy saucepan or skillet, combine sugar, buttermilk, syrup, butter and baking soda. Stir constantly until mixture boils. Stirring often, continue cooking to soft ball stage (238 degrees). Remove from heat. Cool 2 minutes. Add vanilla and beat until mixture is barely thick and creamy and begins to lose its gloss. Add pecans. Drop by tablespoonsful well apart on waxed paper (will spread). Cool completely. Yield: 2 dozen pieces. |
