YEAST ROLLS
1-2 pkgs. yeast or cakes
1/2 c. lukewarm water
2-4 tbsp. fat
2-4 tbsp. sugar or syrup
2 tsp. salt
1 c. milk
1 egg
3 1/4-4 c. sifted all-purpose flour

Soften yeast in lukewarm water. Scald milk and pour it over sugar and salt in mixing bowl. Let cool to lukewarm. Add softened yeast and about half the flour and beat until smooth. Add egg and shortening; mix well. Add rest of flour and mix until dough rolls away from bowl.

Turn out onto floured board. Cover and let rest 10 minutes. Knead lightly 5-10 minutes or until dough is no longer sticky. Place dough in a well-greased bowl and cover. Put in a warm place and let rise until doubled. Divide dough in equal pieces and shape into rolls. Bake in 400 degree oven for 15-20 minutes.
