JEWISH APPLE CAKE 
2 c. sugar
1 c. oil
4 eggs
3 c. flour
1/2 c. orange juice
2 1/2 tsp. vanilla
4 tbsp. baking powder
4 lg. apples
Cinnamon sugar

Combine first 3 ingredients; mix well. Add flour and beat until smooth; batter will be stiff. Add orange juice, vanilla and baking powder; mix well. Peel, core and slice apples. Pour half of the batter into a greased tube pan. Place half the sliced apples on top of batter and sprinkle with cinnamon sugar mixture.

Pour remaining batter over top, followed by a layer of apples and a sprinkling of the cinnamon sugar mixture. Bake at 350 degrees for 1 hour. An oblong 12x16 inch pan can be used or 2 loaf pans. If using loaf pans, reduce the baking time to 50 minutes to prevent the cake from being too dry.
