OYSTER STEW | |
3 doz. oysters 1 med. onion, chopped 1/2 stalk celery, chopped 1/2 c. green onions, chopped 1/4 bell pepper, chopped 1/2 stick butter 2 tsp. liquid oil 1 qt. milk 1 clove garlic, chopped Salt & pepper to taste Chopped parsley, optional Drain oysters. Set aside. Put oil in black iron or heavy pot. Add onions, 1/2 bell pepper, celery and 1/2 green onions. Cook 10 minutes on low heat. Add oysters, 1/4 stick of butter, rest of green pepper and onions, garlic, salt and pepper. Cook until mixture thickens. Add milk slowly and heat just to boiling point. Remove from heat and stir. Add remaining butter and chopped parsley (optional) and serve. |
