HOLIDAY OYSTER STEW | |
3 tbsp. butter 2 1/2 tbsp. all-purpose flour 4 1/2 c. milk 1 1/2 c. half & half 2 (10 oz.) containers fresh Standard oysters, undrained 2 tsp. salt 1/8 tsp. hot sauce Garnish: chopped fresh parsley Melt butter in a Dutch oven over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk and half & half; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add oysters with liquid, salt and hot sauce. Reduce heat, and simmer, stirring constantly, 5 to 8 minutes or until edges of oysters curl. Garnish, if desired. Yield: 2 quarts. |
