SWEET PICKLE CHUNKS 
10 med. cucumbers (5 lb.)
Boiling water
8 c. sugar
4 c. vinegar
2 tbsp. mixed pickling spices
4 tsp. pickling salt

Cover whole cucumbers with boiling water; let stand overnight. Drain. Repeat for 3 more days. On fifth day, drain and cut into bite-size chunks.

Combine sugar, vinegar, spices and salt; bring to boiling and pour over cucumber chunks. Cover and let stand for 2 days. Then, bring mixture to full boil; fill hot, clean pint jars, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath 5 minutes (start timing as soon as jars are placed in water). Makes 9 pints.
