SWEET POTATO PIE 
2 c. hot mashed sweet potatoes (about 3 potatoes)
1/4 c. to 6 tbsp. melted butter
3 eggs, slightly beaten
1 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. milk
1 tsp. vanilla
Unbaked pastry for a 9 inch single crust pie

Cook potatoes in small amount of salted water, covered, until tender. Drain and mash with butter. Beat eggs, sugar, cinnamon, nutmeg, milk, vanilla into potatoes. Pour into pastry lined pan. Bake at 350 degrees about 30 minutes or until set and crust is browned.
