POTATO SKINS 
6 med. potatoes
1/4 c. butter
Salt and pepper
6 slices bacon, crisply fried and crumbled
1/3 c. thinly sliced green onions
3/4 c. shredded Cheddar cheese

Scrub potatoes, dry and pierce with fork in several places. Bake at 375 degrees for 1 hour or until tender. Set, stand until cool enough to handle. Cut potatoes in half lengthwise and scoop out center leaving an 1/8 inch shell. Cover. Chill shells up to 2 days.

Another day - melt 1/3 cup butter. Brush potato shells with butter - inside and out. Place cut side up on baking dish. Bake at 500 degrees, 15 minutes or until browned and crisp. Distribute bacon, onion and cheese evenly into each shell. Bake until cheese melts. Serve hot.
