POTATO SKIN CASSEROLE 
White potatoes
2 onions
1 can Italian bread crumbs
1 (4 oz.) grated Cheddar cheese
1 lb. bacon

Scrub white potatoes, slice. Add salt and pepper. Grease pan with butter, plus extra butter for top. Make 3 layers of the following: Potatoes, chopped onions, Italian bread crumbs, grated Cheddar cheese and on top bacon slightly pre-cooked. Pour grease from bacon over casserole. Bake at 350 degrees for 1 hour.
