SPANISH RICE 
1/2 c. thinly sliced onions
1/3 c. diced green peppers
2 c. Minute Rice
1/4 c. bacon drippings or butter
2 c. hot water
2 c. (8 oz. each) tomato sauce
1 tsp. salt
Dash of pepper

Saute onion, green pepper and Minute Rice (right from box) in melted butter. Add remaining ingredients and mix well. Bring to boil. Reduce heat and simmer uncovered 5 minutes (until rice is tender).
