DIABETIC CAKE 
2 - 1/2 c. water
2 - 1/2 c. raisins
2 c. unsweetened applesauce
3 eggs
2 tbsp. Equal or Sweet & Low
1 - 1/2 c. cooking oil
3 c. self-rising flour
3 tbsp. cinnamon
2 tbsp. vanilla
1/4 c. soda

Cook raisins in the water until all liquid boils out. Cool. Add applesauce, sweetener, oil and eggs, mixing well. Blend in the flour, soda, cinnamon and vanilla. Pour into large tube pan.

Bake at 350°F for 30 to 35 minutes or until center tests done with toothpick.
