APPLE CAKE 
1 c. salad oil
2 eggs
2 c. white sugar
3 c. chunked apples
1 c. pecans or walnuts
2 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder

Combine oil, eggs, sugar and beat well. Add flour, soda, salt, baking powder and spices sifted together. Stir in vanilla and chopped nuts. Stir in chopped apples, batter will be stiff. Bake in greased and floured 9 x 13 inch cake pan at 350 degrees for 55 to 60 minutes.

Good with Caramel Frosting or hard sauce.
