AUNT JENNIE'S APPLE CAKE 
2 eggs, beaten
2 c. sugar
1 1/4 c. oil
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 tsp. vanilla
1/4 c. strong cold coffee
1 c. chopped nuts
3 or 4 c. apples, cut in chunks

Combine eggs, sugar and oil. Add dry ingredients which have been sifted together. Add vanilla and coffee. Mix in nuts and apples. Spread in ungreased 9 x 13 pan.

Bake at 350 degrees for 45 to 60 minutes. Serve plain or with Cool Whip or ice cream.
