OATMEAL CAKE 
1 c. oatmeal
1 1/4 c. boiling water
1 stick butter
1 c. brown sugar
1 c. white sugar
1 1/3 c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. vanilla
2 eggs

Icing:

1/3 stick butter
1 can coconut
1/4 c. cream or evaporated milk
1 c. brown sugar
3 tbsp. powdered sugar

Put boiling water over oatmeal and let stand 20 minutes. Cream butter and sugars. Add eggs, one at a time, and beat well. Mix the oatmeal into creamed mixture, then add the dry ingredients which have been sifted together. Add the vanilla.

Bake in a greased and floured 13 x 9 x 2-inch pan.

Bake at 350°F for 35 minutes.

Icing: Mix butter, coconut, cream or evaporated milk, brown sugar and 10x sugar. Cook above ingredients over low heat until smooth. When cake is finished baking, spread topping on cake and broil under broiler for a few minutes. Watch carefully because it burns quickly.
