EGG SPECIAL 
8 to 10 eggs
1/4 c. milk
2 to 3 potatoes, peeled & cubed
2 slices of ham
1 pkg. of 12 link sausages
1 can whole green chilies
1/2 onion, chopped
Grated cheese
Salsa, salt & pepper to taste

Saute cubed potatoes, onions and chilies until potatoes are tender. Cook sausages separately, chop into pieces. Whisk eggs and milk together, along with desired salt and pepper.

In large skillet, mix eggs, cooked potato mixture, cubed ham and sausages all together and cook over low heat. Turn frequently so eggs will cook. When eggs are done, top with grated cheese and salsa, if desired. Allow cheese to melt and serve warm.
