SODA CRACKER PIE 
3 egg whites
1 tsp. vanilla
1 c. sugar
14 soda crackers, finely crushed
1/4 tsp. baking powder
1/2 c. chopped pecans
2 (16 oz.) cans sliced peaches, well drained
1 c. whipping cream
1 tbsp. sugar

In large mixing bowl let egg whites stand at room temperature about 30 minutes.

Add vanilla and beat with electric mixer on medium speed until soft peaks form (tips curl).

Add sugar, 1 tablespoon at a time, beating on high speed until very stiff peaks form (tips stand straight up).

Fold in mixture of crackers, baking powder and pecans. Spread in a greased 9" pie plate.

Bake in 325 degree oven for 30 minutes. Cool on wire rack. Arrange peach slices over meringue.

Whip cream until stiff peaks form. Spread over peaches. Cover and chill overnight.
