HOT MEXICAN BEEF AND RICE 
2 c. cooked white rice
3/4 - 1 lb. ground beef
2 tomatoes, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1 onion, chopped
3 heaping tbsp. mayonnaise
1 egg
1/4 tsp. chili powder
Tortilla or corn chips

Brown ground beef in skillet. Drain off fat. Mix with remaining ingredients, except chips. Pour into 1 1/2 quart casserole. Top with crushed tortilla or corn chips. Bake at 350 degrees for 45 minutes. Serves 4.
