YAMS AND APPLES 
2 lg. cans yams
4 med. green apples
2 tbsp. cornstarch
3 tbsp. lemon juice
1/8 tsp. salt
1 c. sugar
1 cube butter
Cinnamon, to taste

Spray deep casserole dish with Pam or rub with butter. Drain yams and arrange 1 layer in bottom of dish. (Cut or slice to fit.) Peel and core apples. Slice in rounds over yams.

Combine in a small saucepan the sugar, salt, lemon juice, cornstarch and butter. Cook over low heat, stirring constantly, until thick and clear. Pour 1/3 of mixture over yams and apples. Sprinkle with cinnamon. Repeat layers, ending with sauce and cinnamon. Cook in a 350 degree oven 40-50 minutes (until apples are tender). Serves 8-10.
