YAMS AND APPLES 
2 or 3 lg. yams
1 or 2 cooking apples
1/2 c. sugar
2 tbsp. cornstarch
1/2 tsp. salt
1/8 tsp. cinnamon
3/4 c. water
1/4 c. orange juice
1 tbsp. butter

Cook yams for about 30 minutes. Drain and cool. Peel and slice into a greased 1-quart casserole. Peel and slice apples. Lay slices among yams. Mix sugar, cornstarch, salt and cinnamon in small saucepan. Add water and cook, stirring constantly, until mixture thickens. Add juice and butter. Stir in well. Spoon over yams and apple slices. Bake at 350 degrees until bubbly, about 30 minutes.
