YAM & ESCALLOPED APPLES 
2 1/2 lbs. (5 med.) yams
1/2 c. maple syrup
1 (12 oz.) pkg. frozen escalloped apples (Stouffer's), thawed

Place unpeeled yams in large saucepan, cover with water and bring to a boil. Reduce heat. Simmer, covered, until tender, 25 to 30 minutes. Drain, cool, peel and cut into 1/2 inch slices.

In 2 quart microwavable casserole, layer half of yams, all of escalloped apples and remaining yams. Pour maple syrup over yams. Microwave on high, covered, rotating 1/4 turn twice, until heated through (8 to 10 minutes). Let stand 3 minutes. Pour additional syrup over yams (optional) and serve. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
