ENCHILADA CASSEROLE 
1 1/2 to 2 lbs. ground beef
1 med. onion, chopped
4 oz. green chilies, chopped
Cream of mushroom soup
Enchilada sauce (mild or hot)
Velveeta cheese (regular or Mexican)
Corn tortilla chips

Brown ground beef and onion. Add green chilies. Mix cream of mushroom and enchilada sauce in bowl. Layer in 9 x 13 inch baking dish, crunched up tortilla chips, 1/2 meat mixture, Velveeta cheese. Repeat. Top with sauce. Bake at 350 degrees 20 to 30 minutes.
