MEXICAN MEATBALLS 
1 sm. diced onion
1 lb. ground lean beef
1 lb. ground pork
7 eggs, 3 of them hard boiled
1/4 c. Minute Rice
3 tomatoes
1 lg. can tomato sauce
Pepper to taste
1 beef bouillon cube
3 cloves fresh garlic
1/4 tsp. garlic powder
1/4 tsp. oregano
1/2 tsp. crushed mint leaves
1/4 tsp. salt

Mix beef, pork, 2 cloves garlic crushed, salt, pepper, mint, oregano, 4 eggs, rice. Set aside. Boil tomatoes 5 minutes. Blend in blender 1 clove garlic, onion, tomato sauce, bouillon and garlic powder.

Quarter boiled eggs and shape a 1 1/2 inch meatballs around each quartered egg. Boil meatballs in sauce. When rice is done meat is finished. It's great served over rice with guacamole and warm corn tortillas on the side.
