SQUASH CASSEROLE 
2 qts. sliced tender squash
1 c. chopped onion
4 c. water
1 tsp. salt
Dash of pepper
4 tbsp. butter
Grated sharp or mild Cheddar cheese
Bread crumbs sauteed in butter

Cook squash and onion together in 4 cups water. When tender, drain thoroughly, add salt, pepper and butter. Blend well and place in shallow baking dish. Cover with cheese. Top with sauteed bread crumbs. Bake at 375 to 400 degrees for 25 to 30 minutes or until crumbs are golden brown.
