TRI-HI MEAT LOAF 
1 c. cracker crumbs (Saltines)
1 1/2-2 lbs. ground beef
1 can tomato paste
2 eggs, beaten
1 c. finely chopped onion
1/3 c. finely chopped green pepper
Dash salt
1/8 tsp. pepper
1 1/2 c. small curd cottage cheese (or Ricotta cheese)
1 (8 oz.) can mushrooms (or 4 oz.)
1 tsp. parsley, dried

Combine 1/2 cup cracker crumbs with beef, tomato paste, eggs, onion, green pepper, salt and pepper. Pat half of the mixture into the bottom of an 8-inch square baking dish (may need to use slightly larger).

Combine remaining cracker crumbs with cottage cheese, mushrooms, and parsley. Spread over meat mixture in dish. Top with remaining meat mixture. Bake at 350 degrees for 1 hour. Let stand 10 minutes. Yield: 6 servings.
