BLUEBERRY BUTTERMILK MUFFINS 
2 c. sifted enriched flour
1/2 c. sugar
1 tsp. salt
1/4 tsp. baking soda
2 1/4 tsp. baking powder
1/4 c. melted butter
1 slightly beaten egg
1 c. buttermilk
1 c. blueberries (frozen or fresh)

Mix and sift flour, sugar, baking soda and baking powder. Mix melted butter, egg and buttermilk together. Stir with dry ingredients just enough to moisten. Fold in blueberries. Fill muffin pans with paper baking cups, filling 2/3 full. Bake in oven at 425 degrees for 20 to 25 minutes. Yield: 12 muffins.
