CHICKEN MILANO | |
3 tbsp. olive oil 1 tsp. salt 1/2 tsp. pepper 1/4 tsp. oregano 1/4 tsp. basil 2 thick pieces boneless chicken breast, cut in half 1 c. fine bread crumbs 2-3 med. potatoes, peeled and quartered Paprika In medium bowl mix olive oil, salt, pepper, oregano and basil. Dip chicken in mixture and cover in bread crumbs. (Can marinate chicken in mixture before covering in bread crumbs up to 2 hours in refrigerator, if desired.) Place chicken in shallow 9-inch microproof baking dish. Roll potatoes in remaining marinade, adding more oil if necessary. Place in dish with chicken. Cover with waxed paper. Cook on HIGH (max power) 5 minutes. Turn chicken and stir potatoes. Sprinkle with paprika. Cook on HIGH (max power) 5 more minutes. Let stand, covered, 5 minutes before serving. |
