BREAKFAST CASSEROLE 
1 lb. sausage (turkey sausage may be used)
8 slices bread, cubed, no crust
8-10 eggs (2 c. Eggbeaters may be used)
2 c. milk (skim milk can be used)
1 c. grated Cheddar cheese or low cholesterol cheese
1 sm. can mushrooms (optional)
Salt and pepper to taste
1/3 c. chopped onion (optional)
1/3 c. chopped green pepper (optional)

Brown sausage, chopped into crumb-like pieces, drain on paper towels. Lightly grease a 9x13 inch pan with Pam. Place bread cubes in the pan. Beat eggs, cheese, and milk in a bowl. Add onion, green pepper, and mushrooms to mixture. Pour over bread cubes. Sprinkle sausage on top. Cover and refrigerate overnight. Bake at 350 degrees for 1 hour.
