SWEET POTATO PUFF CASSEROLE 
6 med. sweet potatoes with skins on
2 eggs, separated
3 tbsp. butter
1/4 c. brown sugar
1/2 tsp. salt
1/4 c. milk
1/2 c. crushed pineapple
Marshmallows

Cook potatoes with skins on until tender in salt water. Peel and slice. Cream butter. Add sliced potatoes and beat until mashed. Add eggs, salt, sugar and milk; beat again. Add pineapple. Fold in beaten egg whites. Place in a buttered casserole dish and bake at 375 degrees for 45 minutes. Place mini marshmallows on top and return to oven until marshmallows brown.
