AUNT BONNIE'S SWEET POTATO PUFF
CASSEROLE
 
4 c. sweet potatoes (cooked and mashed)

Can cook 4 to 6 minutes in microwave, and halved.

1 c. packed brown sugar (light brown)
1/4 c. softened butter
1 tsp. vanilla
2 beaten eggs
1/3 c. milk

Combine all and put in buttered 2 quart casserole. Sprinkle with cinnamon. Add topping (1/4 cup flour, 1/3 cup butter, 3/4 cup packed brown sugar, 1 cup pecans chopped. Bake at 350 degrees for 25 minutes. Can do ahead.

Since microwave ovens vary in power, you may need to adjust your cooking time.
