POTATO DUMPLINGS 
6 med. potatoes
6 slices bread
2 c. mashed potatoes
1 egg
Salt
1/2 c. flour

Grate raw potatoes and squeeze dry, using dish or towel or unbleached muslin. Measure 2 cups. If you want very white dumplings use white bread with crust removed. Soak bread in water and squeeze dry. Measure 2 cups.

Mix together grated and mashed potatoes and soaked bread. Add enough flour to make mixture stick together. Form into balls. Boil water in large saucepan, drop dumplings into boiling water and boil slowly, uncovered, about 30 minutes. Remove dumplings immediately. Makes about 8 dumplings.
