BEER BATTER FOR FISH 
1 1/2 c. sifted all purpose flour
1 tsp. salt
1 tbsp. melted butter
2 eggs, separated
3/4 c. stale beer

Combine flour, salt, melted butter, egg yolk and sale beer; beat only until smooth. Cover and let stand in cool place from 1 to 12 hours. Just before using beat egg whites until stiff and fold gently into batter. Very good on mushroom, eggplant and other vegetables.
