MAUDE ALYCE'S PECAN BRITTLE | |
2 c. broken pecan pieces 2 c. sugar 1 c. white Karo 1 c. water 1 rounded tsp. salt 1 rounded tsp. baking soda Mix sugar, Karo, and water; let it come to a hard boil. Add pecans and cook over medium heat until the center part of pecan turns a golden brown. Remove from heat and add the salt and soda; stir 2 or 3 times. Pour on a large area which has been well buttered (oleo is suitable also). As soon as you can touch outer edges, lift with a spatula onto an oiled paper and then pull as thin as possible. Store in air-tight containers. Another way to test for doneness is to put a drop or two on a buttered saucer. If you can pick it up and it crackles, it is done. Good Luck! |
