BLINTZES 
6 eggs
2/3 c. sugar
3 c. flour
3 c. milk
1/2 c. water
1 tsp. salt
1 tbsp. oil
Oil for frying
24 oz. farmers cheese
2 eggs
3/4 c. sugar
1 tsp. vanilla

Beat 6 eggs and sugar in large bowl. Add flour and salt. Mix in milk and water and 1 tablespoon oil slowly until well blended and no lumps appear. Heat 1 teaspoon oil in non-stick frying pan. Pour enough batter into pan to cover bottom. Fry until the top of the blintz looks dry, then turn and fry on other side. Repeat with remaining batter, adding oil in pan before pouring in batter. More water may be added if batter gets too thick.

Mix remaining ingredients together. Place approximately 3 tablespoons filling in the middle of each blintz, fold opposite sides towards middle, then roll from open end until closed. Can be heated in the oven or in a pan over the stove. Makes approximately 18.
