FILLING: 3 lbs. confectioners' sugar 2 lbs. peanut butter (smooth) 1 lb. butter, at room temperature Mix filling ingredients together and shape into balls the size of a Buckeye (large nut). CHOCOLATE COATING: 2 (12 oz.) pkg. chocolate chips 1 bar paraffin (1/2 of a 3x6 inch bar per 12 oz. pkg. chocolate chips) Melt chocolate chips and paraffin in double boiler. Dip balls into chocolate coating with toothpick, leaving small circle uncovered, exposing peanut butter filling. Remove toothpick and cover toothpick hole by rubbing finger gently over it. Chill, if necessary. |
