SCOTTISH SHORTBREAD 
3/4 c. butter, softened
1/4 c. sugar
2 c. all-purpose flour

Heat oven to 350 degrees. Cream butter and sugar, work in flour. If dough is crumbly, mix in 1 to 2 tablespoons soft butter. Roll dough 1/2 to 1/3 inch thick on lightly floured cloth-covered board. Cut with floured cookie cutter. Bake about 20 minutes. Remove from cookie sheet immediately. Makes 2 dozen.
