SCOTTISH SHORTBREAD 
4 c. flour
1 c. sugar
1 lb. butter

Put the ingredients in large bowl and mix with pastry cutter, then knead mixture thoroughly. When it forms a ball, divide into 4 flat cakes and press into four 9 inch disposable pie pans. Prick surfaces with a fork evenly. Bake at 275 degrees for about 1 hour until cakes are delicately brown. Can be wrapped and given as gifts. Makes 4.
