SCOTTISH SHORTBREAD 
1 c. softened butter
1/2 c. + 2 tbsp. sugar
2 c. sifted flour
1/4 tsp. salt
1/4 tsp. baking powder

Preheat oven to 350 degrees. Beat butter until light and creamy. Beat in 1/2 cup of sugar. Sift the flour with the salt and baking powder. Fold into butter mixture. Place the dough on a cookie sheet and pat into a rectangular shape 1/2-inch thickness. Mark into 1 x 2 inch bars. Sprinkle with the remaining 2 teaspoons of sugar and bake in the center of the preheated oven at 350 degrees for 15 minutes or until the edges are very lightly browned. Cut into bars and store in an airtight container. Makes about 20 pieces.
