RED CUCUMBER PICKLE | |
2 gal. sliced cucumbers Peel and take out cucumber seeds; cut in 4 inch slices. Put in a big stone jar. Add 2 cups lime and 8 1/2 quarts water. Stir and let stand 24 hours. Drain and wash, return and soak in clear water 3 hours. Drain then put 1 cup of vinegar, 1 small bottle red food coloring, 1 tablespoons alum and enough cold water to boil 1 hour, drain. SYRUP: 2 c. vinegar 10 c. sugar 1 pkg. red hots (6 3/4 oz.) 2 c. water 4 sticks cinnamon, broke Bring to a boil and pour over rings. Let stand overnight. Drain and reheat for 3 mornings. Last morning put rings in jars (3) and pour syrup over and seal. |
