MANDERIN CHICKEN | |
Cook 3-4 pounds chicken breast or parts with dense meat in oven until almost done. Cut up and remove bones. SAUCE: 1 c. tomatoes, canned 1/2 c. vinegar cider 1/2 c. chopped onions 1/4 tsp. salt 1 c. sugar 1/2 c. crushed pineapple 1/4 tsp. ginger 1/2 c. green pepper, chopped (add green pepper when sauce is done) Combine all ingredients in saucepan and bring to boil. Reduce heat and simmer 20 minutes, stirring often. When done add cornstarch and water mixture to thicken. While sauce is cooking, make a batter, dip chicken pieces in batter and deep fry. BATTER: 1/2 c. flour 1/2 c. cornstarch 1 tbsp. sugar 1 tbsp. baking powder 1 tsp. salt 2/3 c. cold water 1 egg Mix dry ingredients. Mix egg and water and add to mixture. When chicken is done place on bed of lettuce and add sauce. |
