ZUCCHINI QUICHE 
1/4 c. parsley, chopped
Chopped onion
2 cloves garlic, chopped
1 zucchini, sliced thinly
2 tbsp. oil
1/4 c. Parmesan cheese
1/2 tsp. salt, black pepper
3/4 c. bread crumbs
3/4 c. grated cheese
3/4 c. milk
2 eggs, beaten

Heat oil in frying pan and fry the parsley, onion, garlic and zucchini until lightly browned. Remove from heat and season with salt and pepper. Place zucchini, bread crumbs and cheese in pan. Combine milk and eggs and pour over the mixture. Sprinkle with Parmesan cheese and bake in oven at 400 degrees for 25 minutes.
